This apple blueberry crisp is the perfect sweet and slightly tart dessert! Made with fresh apples and blueberries, it’s topped with a warm, spiced, crunchy oat crisp topping. Easy to make and so delicious!

As much as I love a good fruit pie in the summer, sometimes it just feels like a tiny bit too much work. A crisp, however? Perfect! You get all the delicious fruit filling plus a crunchy oat topping, what could be better?
I love serving this crisp with a scoop of vanilla ice cream, but it would also be so amazing with a big dollop of homemade whipped cream!

Ingredients Needed

- Butter: You can use regular butter or vegan butter if you’re dairy-free or vegan.
- Apples: Feel free to use any variety! If you use something like a Granny Smith then the crisp will be more sour, while a Red Delicious might be a little mushy when baked.
- Blueberries: This crisp recipe can be made with fresh or frozen blueberries.
- Oats: You can use rolled oats or quick cook oats.
- Brown Sugar: Feel free to swap out the brown sugar for coconut sugar!
- Flour: You can use whole wheat flour or white whole wheat flour.
Step by Step Instructions

Step 1: Preheat your oven to 350°Fahrenheit and grease an 8×8 square baking dish or a 9-inch round baking dish with butter.
Step 2: In a large bowl, mix together all of the crisp ingredients. Use a fork, your hands, or a pastry cutter to mix everything until combined. Set aside.

Step 3: Add the sliced apples and blueberries to a large bowl and toss with cinnamon and vanilla. Pour into the greased baking dish.

Step 4: Sprinkle over the crisp mixture. Bake in the preheated oven for 40-50 minutes, or until the top is a light golden brown.

Step 5: Serve with whipped cream or ice cream and enjoy!
What type of dish can I use?
What is so great about a fruit crisp is that it’s really easy to swap out the type of baking dish you can use!
I’ve made this blueberry crisp in a 9-inch round baking dish, but you can also use an 8-inch square baking dish or even a cast iron skillet! Just make sure the skillet is around 8-9 inches.

Expert Tips
- I recommend slicing the apples thinly so they can bake evenly in the oven.
- I love serving this with vanilla ice cream, especially while the crisp is still warm, but it’s also so good with some whipped cream.
- Greasing your baking dish will make it easier to scoop the crisp out, so don’t skip that!
- Make sure the crisp ingredients are really fully combined and all the oats and flour are evenly moist. That’ll give you a nice, crispy oat topping instead of a dry one.
Storage Instructions
Store the apple blueberry crisp covered in the fridge for up to 5 days, or at room temperature for up to 4 days. I like warming it up before enjoying!
