Soft Apple Oat Muffins (with Streusel)

These apple oat muffins are the perfect treat to welcome Fall! They are easy to make, with a light and fluffy texture, and bits of apple in every bite. Topped with a yummy cinnamon oatmeal streusel that makes them the ultimate comfort food. I've tested this recipe with dairy ingredients and with dairy free ingredients for you too!

Ingredients

Apple Oatmeal Muffins

  • ½ cup butter, melted (dairy free or regular)
  • ½ cup light brown sugar
  • 2 eggs
  • 1 cup milk (dairy free or regular)
  • tsp vanilla extract
  • cup all-purpose flour
  • 1 cup old fashioned oats (rolled oats)
  • 1 tsp ground cinnamon
  • ½ tsp baking soda
  • ¼ tsp salt
  • 2 cups apples, chopped small (dairy free or regular)

Cinnamon Streusel Topping

  • ½ cup all-purpose flour
  • cup old fashioned oats (rolled oats)
  • ¼ cup light brown sugar
  • 1 tsp ground cinnamon
  • ¼ cup butter, softened

Instructions

Apple Oatmeal Muffins

  • Preheat oven to 400°F. Line muffin tins with liners.
  • In a large bowl, whisk together melted butter, milk, eggs, and vanilla extract.
  • Whisk in the light brown sugar.
  • Add in the flour, oats, salt, cinnamon, and baking soda, then whisk. Finally, stir in the chopped apples. Set aside while you make the crumb topping.

Cinnamon Streusel Topping

  • Add all streusel ingredients to a small bowl and mix with a fork until fully combined.
  • Divide the muffin batter between the liners, filling each one almost full. Sprinkle a generous amount of the crumb topping over each muffin, then bake for 15-20 minutes, or until a toothpick inserted in the middle of a muffin comes out clean.
  • After 5 minutes, transfer the muffins to a cooling rack. Enjoy!

Notes

Flour: The right way to measure your flour is to weigh it using a kitchen scale, or use the scoop and level method.
Storage and Freezing Instructions:
Store in an airtight container at cool room temperature for up to 3 days. Freeze for up to 3 months by placing in a Ziploc bag. Thaw at room temp or heat one at a time in the microwave before serving.
