Pumpkin Cheesecake Cookies

soft, chewy, pumpkin cookies with cheesecake filling

1. Mix icing sugar and cream cheese until smooth

2. Add balls of filling to a plate then freeze

3. Whisk melted butter and sugars together

3. Mix in vanilla and pumpkin puree, then add dry ingredients.

4. Mix until just combined.

5. Stir in chocolate chips and graham crackers if desired.

6. Add the filling to balls of cookie dough

7. Seal the dough then bake at 375°F for 9-12 minutes
