Dairy Free Classic Vanilla Cupcakes

Ingredients needed:

1. Make buttermilk: add vinegar to milk, let sit for 5 minutes

2. Beat butter and sugar until light and fluffy

3. Mix in eggs, egg whites, vanilla, and buttermilk

4. Add dry ingredients. Bake for 12 minutes at 350°F

5. Make buttercream. Beat butter and shortening together

6. Mix in vanilla and icing sugar until combined

Tip: For pure white buttercream, add in white food coloring

7. Frost the cupcakes and decorate with sprinkles if desired!
