1. Whisk together all dry ingredients in a medium bowl.

3. Add in shredded coconut, mix until combined
4. Bake at 350°F for 18-21 minutes
5. Pour more coconut on a pan and bake for 5 minutes
6. Make toasted coconut buttercream, then frost cupcakes
